Casseroles (Sweet and Crunchy): Casseroles are loved by all; however, some people are being forced to avoid them. In this recipe, the sweet potatoes serve as the host of Vitamin A, C, B6 etc. and apple sauce and other ingredients provide the necessary sugary taste.
Ingredients: 2 lbs. sweet potatoes, 3 tbsp coconut oil or butter, 1 cup unsweetened apple sauce, 2 tsp ground cinnamon, 1 tsp sea salt or to taste, pinch of ground nutmeg, 1 cup chopped pecans, and extra salt & cinnamon/sugar for topping.
Cooking Method: Preheat the oven to 450 F. Bake sweet potatoes in the oven until they are soft. After doing so, remove their skin and cut them in half. Now, reduce the oven to 375 F. Take a blender and add sweet potatoes and apple sauce in it. Blend the ingredients until they are smooth. Moreover, add cinnamon, salt, nutmeg, and coconut oil in it and mix the ingredients. Transfer the batter into the baking dish and bake for 25-30 minutes.
